Beets: Any kind will work but I prefer to use the most readily available red beets because of the deep color. Apart from its delicious flavour what I also love about this dish is how easy it is to make. Because the beets are roasted (which itself requires minimal effort) essentially all that’s needed is to grate them, combine with the other ingredients, heat and serve!
